Fake Betty Crocker Brownies

This recipe I have done before and it came out so good I decided to do it again. This time I doubled the recipe because I think it was too thin and crispy for a 9x13 pan like it called for.

I added walnut on one side, for the cool people, and topped it with chocolate chip. Looking at the picture above I'm going to say a bit more than half.

Honestly, this recipe is simple and easy to make. I'm all for simple and easy...mmhhmm. This brownies came our pretty freaking good! Once again, I was the "coolest person eva" to my family.

I DID IT! - Bread Machine Cinnamon Rolls

I've been trying new recipes here and there and since I shall be returning to work full time next week I decided to make this Bread Machine Cinnamon Roll. Just in case I don't have time in the near future. Beside, why wait for my awesome neighbor to make it for us once a year when I can do diz!!!! This recipe was simple and easy to make. Well at least it  sounded that way ;)

Friday I woke up feeling horrible and I knew it was my turn for this stupid cold to attack me since my FIANCE and kids were recovering from it. So before I got it bad, I decided to bake brownies and Bread Machine Cinnamon Roll. Did I tell you that my FIANCE (love that word!) gave me a bread machine for Christmas among other things to shut me up. Now you know!

So thanks to Crystal I created my first ever Cinnamon Roll. The above picture was taken by me and it came out blurry as heck. I will blame the my cellphone or my teary eyes.

I have to say I love this recipe and I did double the filling because I felt it needed more.  For a beginner like myself,  the recipe was easy and simple to follow. My rolls were a bit smaller than what I wanted them to be. I have to practice on making the "roll" bigger I guess. They came out cute and tasted great! My family thought I was the coolest thing ever! ;)

As a newbie, this recipe was simple and it tasted delicious. My entire family loved it, the kitchen was intact, and nothing burned.

Like my 2 year old says, "I DID IT!"

Last Night Dinner.. WINNER!!!

Last week I decided that I was going to make BBQ Meatball. 

I found the recipe very easy for me to make and not burn the house down. Yes, the house is still standing and I did NOT burn anything, thank you for asking. This recipe is from The PioneerWoman from Food Network. I made boxed mashed potatoes to go with the BBQ meatballs. You heard me, boxed!!!

Anyway, back to my cooking. The meatballs came out so good I had no left overs. I even took a picture to send to my friend as confirmation and proof it was completed and the kitchen was standing. The above picture is from The Pioneer Woman site. I think they came out pretty freaking good! WoOt!
 I do recommend this recipe, is easy to make and as you all can see my house is still standing. LOL.

On my baking list for this week...


One of my favorite cakes ever!

Better Than Brad Pitt Cake

Keep in mind that I never tasted the original Brad Pitt myself ;) but this cake is so delicious that is probably how he will taste.. jk jk!


INGREDIENTS

* 1 (18.25 ounce) package yellow cake mix
* 1 (20 ounce) can crushed pineapple, with juice
* 3/4 cup white sugar
* 2 (3.5 ounce) packages instant vanilla pudding mix
* 3 cups milk
* 1 cup heavy whipping cream
* 1 teaspoon vanilla extract
* 1/4 cup confectioners' sugar
* 3/4 cup flaked coconut, toasted

DIRECTIONS

1. Prepare yellow cake as directed, using a 9 x 13 inch pan. Bake until done, and remove from oven. Poke holes in the top of the cake using a fork.
2. In a saucepan, combine pineapple with juices and sugar. Cook over medium heat until syrup thickens. Pour over top of warm cake, and cool.
3. In another bowl, beat milk with pudding. Spread over the pineapple mixture.
4. Beat whipping cream until soft peaks form, and then beat in confectioners' sugar and vanilla. Spread whipped cream over pudding. Sprinkle toasted coconut over the top of the cake. Refrigerate for several hours or overnight.
